Le Pre 2.0
An outdoor dining offering for spring/summer/fall seasons.


We reflected on notes from 1.0 the previous year, and pushed for an ambitious, full service outdoor kitchen where we could execute up to 100 diners in 2 seatings at both lunch and dinner.

The equipment schedule included taking inventory, measure & spec of existing equipment from the restaurant upstairs to be moved and repurposed outdoors.


I started with this framework, and worked with the chefs to plan each station in detail, with service capacity and work flow priorities - adding hot holding ovens, additional tables, fridges, sinks and oven to suit.


I also worked with Front of House, in the same capacity:
In the dining room, we maximized seating with flexibility to easily change from 4 tops to 2 tops;


we designed and built custom service stations; and integrated the main FOH workstation/bar with the kitchen layout - easing communication, limiting problematic crossover and maintaining a smooth workflow for each.


We made a better connection between the outdoor grill house and the kitchen.
